Classic Summer Salad Recipes from the MediLodge Whole Person Wellness Program

The MediLodge Whole Person Wellness Program is delighted to share some simple and delicious recipes for a picnic or barbeque as part of this month’s salute to SUMMER FUN!  These recipes contain mayonnaise so be sure to keep them covered and in the cooler to prevent spoilage.

Classic Potato Salad

Directions:  Boil, peel and cube 2 pounds of russet potatoes; toss with 2 tablespoons cider vinegar and 1/2 teaspoon salt. Mix 2 cups mayonnaise, 2 chopped scallions, 1 chopped celery stalk, 1 tablespoon each Dijon mustard and vinegar, 1 teaspoon sugar and salt. Toss with the potatoes.

 

 

Classic Coleslaw

Directions:  In a large bowl combine 1 small head of cabbage shredded and 3 medium carrots, shredded. Combine 1 cup mayonnaise, with 1/3 cup sugar, 1/4 cup cider vinegar. Pour mixture over cabbage and toss to coast.

 

 

Chicken Salad with Grapes

Directions:  In a large bowl combine 2 cups cooked chicken diced, one cup seedless grapes cut in half, one cup salted cashews, one small Gala apple, finely diced, 1/4 cup chopped red onion, 1/4 cup chopped green onions, 1/2 to 1 cup of mayonnaise, 1 -2 tablespoon of lime juice, 1 teaspoon fresh dill. Mix all ingredients together and salt and pepper to taste.

With a whole person wellness approach, the physical needs will not be downplayed, but will be held in equal importance as the dimensions that involve mind and spirit. In whole person wellness a high priority is placed on prevention, individual involvement and the responsibility we each have for achieving optimal wellness of body, mind and spirit.
