Summer Salad Recipes From MediLodge Whole Person Wellness Program

The MediLodge Group encourages healthy lifestyle choices through our Whole Person Wellness Program.  Summer is here and with that comes cookouts, picnics and potlucks.  A nice refreshing salad is a welcome addition to any summer meal.  Salads come in two basic varieties;  tossed, when you mix everything together with salad fork and spoon, and composed, where you artfully design a plate.  The following recipes come from the Spring 2013 issue of Living Healthy.

Red Hot Mama Composed Salad

Servings: 4

  • 8 leaves red leaf lettuce
  • 1 small head radicchio
  • 4 small ripe tomatoes
  • 8 grape tomatoes, halved
  • 1 hard-cooked egg, sliced
  • 4 small radishes, sliced
  • ¼ cup thinly sliced red onion

Wash and dry lettuce and radicchio leaves.  Arrange lettuce on four plates.  Fan out radicchio as a flower.

Cut tomatoes in quarters and remove pulp.  Slice quarters in half lengthwise to make interior “petals.”  Center a slice of egg in the flower and decorate each plate with radish slivers and red onion.  Serve Red Pepper Salad Dressing on the side.

Medilodge Salad Recipe

Red Pepper Salad Dressing

  • ½ cup roasted red peppers (jarred in fine, not in oil)
  • ¼ cup sun-dried tomatoes (not in oil)
  • ¼ cup fat-free buttermilk
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • ½ teaspoon red pepper flakes

Put all ingredients into a small food processor or blender.  Mix well and serve.

 

Green Goddess Dressing

  • ½ cup light mayonnaiseMedilodge Salad Recipe
  • ½ cup fat-free buttermilk
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped fresh parsley
  • 4 green onions (scallions), chopped
  • 1 to 2 garlic cloves, minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon lemon juice
  • 1 tablespoon prepared horseradish
  • 1 teaspoon dried basil

Put all ingredients into a small food processor or blender.  Mix well and serve.
